Frequently Asked Questions — Atto Sushi

Everything you need to know before your visit

Omakase means “I leave it up to you” — the chef curates a multi-course tasting based on the day’s best ingredients. At Atto Sushi, we specialize in dry-aging fish using traditional Edomae techniques. Dry-aging develops deeper umami flavors through the conversion of ATP to inosinic acid, while controlled protein breakdown creates a more tender, complex texture. Not all fish is aged — our chef selects only varieties that benefit from the process.
Our Lunch Omakase is $85 (13 courses) and Dinner Omakase is $115 (17 courses). We also offer lunch specials: Hachi set (8 nigiri + 1 roll, with miso soup or salad) for $30, or Atto Style set (10 deluxe nigiri, with miso soup or salad) for $50. Prices are subject to change based on seasonal availability. Tax and gratuity are not included.
Reservations are strongly recommended. We accept reservations through Resy. Walk-ins are welcome but subject to availability, especially during dinner service.
Both the lunch and dinner omakase last approximately 90 minutes. Please arrive 10 minutes before your seating time so the pacing remains consistent for the entire counter.
We do our best to accommodate allergies and dietary needs. Please note any restrictions when making your reservation through Resy, and our team will confirm what we can safely prepare. We currently do not offer a fully vegetarian or vegan omakase.
Smart casual. We want you to be comfortable while respecting the intimate counter experience. We kindly ask guests to refrain from wearing strong fragrances, as they can interfere with the delicate flavors of the sushi.
We require at least 24 hours’ notice for cancellations. Late cancellations or no-shows may be subject to a fee, as ingredients are pre-ordered and sourced specifically for each seating.
Atto Sushi specializes in Edomae-style omakase. The chef carefully ages select fish to enhance both texture and flavor. Aging allows the texture to soften and the flavors to deepen, and is most notably applied to medium-fatty tuna, which develops a melt-in-your-mouth texture with concentrated umami. Aging time varies based on fish type, fat content, freshness, and desired taste profile.

Fresh fish has a clean, bright flavor. Dry-aging allows enzymatic processes to develop deeper, more complex flavors — similar to how dry-aged beef develops richness. The key compound is inosinic acid, which develops as ATP breaks down after the fish is harvested. Our chef monitors each fish individually to serve it at the precise moment of peak umami development. Learn more about the science.
